1. Cook the Shrimp
Melt 2 tablespoons of butter in a large pot over medium heat. Add the shrimp and cook for 2β3 minutes until pink and just cooked through. Remove the shrimp and set aside.
2. SautΓ© the Vegetables
Add the remaining tablespoon of butter to the same pot. Stir in the onion, garlic, celery, and carrot. Cook for 5β6 minutes until softened and fragrant.
3. Make the Roux
Sprinkle the flour over the vegetables and stir continuously for 1β2 minutes to cook out the raw flour taste.
4. Build the Bisque
Slowly whisk in the seafood broth until smooth. Add the heavy cream, white wine (if using), Old Bay seasoning, cayenne pepper, salt, and black pepper. Bring to a gentle simmer and cook for 10β15 minutes, stirring occasionally, until the soup thickens slightly.
5. Add the Seafood
