For the Mango Glaze:

  • ½ cup mango pulp
  • 3 tablespoons sugar
  • 2 tablespoons water

For Decoration:

  • 1 ripe mango, diced
  • Whipped cream, for piping around the edges

1. Prepare the Crust

  • Crush the biscuits into fine crumbs.
  • Mix with the melted butter until evenly combined.
  • Press the mixture firmly into the bottom of a 20–22 cm (8–9 inch) springform pan.

2. Make the Cheesecake Filling

  • Sprinkle the gelatin over the water and let it bloom for 5 minutes.
  • Microwave for about 15 seconds until dissolved (do not boil).
  • In a large bowl, beat the cream cheese until smooth.
  • Add the sweetened condensed milk, mango pulp, and heavy cream, then mix until creamy.
  • Stir in the dissolved gelatin and mix thoroughly.
  • Pour the filling over the chilled crust and smooth the top.
  • Refrigerate for at least 6 hours, or preferably overnight, until completely set.

3. Prepare the Mango Glaze

  • In a small saucepan, combine the mango pulp, sugar, and water.
  • Cook over medium heat for 5–7 minutes, stirring frequently, until slightly thickened.
  • Allow the glaze to cool completely.

4. Decorate

  • Once the cheesecake has fully set, pour the cooled mango glaze over the top.
  • Arrange the diced mango evenly over the glaze.

  • Chill for another 15 minutes before slicing and serving.
